Cëe's Kitchen: Orange Popcorn cupcakes

I recently got a stand mixer, so I decided to make some cupcakes to test it out. Initially I wanted vanilla cupcakes, but since I couldn't find the premix at the supermarket I settled for the orange flavoured one instead. I did, however, made my own icing (recipe below) and topped it with salted popcorn and caramel sauce - this is the ultimate weekend treat! Instead of using sweet popcorn, I used salted so that the cupcake wouldn't end up being way too sweet. Overall, I think the flavours complemented each other really well and you should give it a try! 


P/s: if you think you may be short on time or rarely bake, use premix! Most premixes only require basic ingredients such as eggs, butter or milk which you should already have in the kitchen.

Icing Recipe (for 12 cupcakes)

YOU'LL NEED:


- 120grams of unsalted butter (softened/room temperature)
- 350grams of confectioners' sugar
- 2 tablespoons of orange juice without the pulp (or 2 teaspoons of vanilla extract)
- 1 tablespoon of milk

DIRECTIONS:

Beat softened butter until smooth and fluffy, then gradually beat in sifted confectioners' sugar at 3-5 minutes intervals until fully incorporated. If you want your icing to be white, beat the butter for about 4 to 5 minutes before adding in the sugar. Add in milk and orange juice (for flavour) or vanilla extract and mix well.

Once that's done, pipe it on cupcakes that have been left to cool to room temperature and you're done! For toppings, I used salted popcorns, orange zest and caramel syrup.
